Orange Sponge Cake

cake

1 1/2 cups flour level
1 1/2 cups sugar
1/2 cup orange
salt
5 eggs separated
1/2 teaspoon B.P. [baking powder]

cream sugar, egg yolks

add orange juice

salt & flour sifted 3 or 4 times together next

then add whites beaten stiff with B.P. add last

bake in sponge cake pan 1 hr in slow oven.

 

Sometimes Aunt Pit didn't tell us the exact oven temperatures. Here's a cheat sheet.
Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F
